Low Sugar Banana Blueberry Muffins

Ingredients:

  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 cup mashed bananas
  • 1/4 cup milk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 3/4 cups flour
  • 1/3 cup oats, plus some to sprinkle on top before baking
  • 1 tsp sugar

Instructions:

  1. Preheat oven 325 degrees. Grease 12 muffin cups in muffin tin.
  2. In large bowl, beat coconut oil, honey/syrup, eggs, mashed banana, baking soda, vanilla, salt, and cinnamon.
  3. Add flour and oats. Mix till combined. Add blueberries and mix.
  4. Divide batter evenly between muffin cups. Sprinkle tops of muffins with oats and sugar. Bake 22-25 minutes.

Tips:

  • Keep at room temperature for 2 days, or in the refrigerator for up to 4 days.
  • Can be kept in freezer for up to 3 months.
  • Can add chocolate chips.
