Homemade Cornbread

Ingredients:

  • 2/3 cup butter
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 1-2/3 cup buttermilk
  • 2-1/3 cup flour
  • 1 cup cornmeal
  • 4-1/2 tsp baking powder
  • 1 tsp salt

Instructions:

  1. Preheat oven to 400 degrees
  2. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes.
  3. Combine eggs and milk in a bowl.
  4. Combine flour, cornmeal, baking powder and salt in a separate bowl. Add to creamed mixture alternately with egg mixture.
  5. Grease a cast iron skillet by melting butter over low heat. Pour cornbread batter into pan.
  6. bake 22- 27 minutes or until a toothpick inserted in center comes out clean.
  7. Cut and serve warm.
