(makes aprox. 3 dozen)

Ingredients:
- 4 eggs
- 2 cups of sugar
- 1 16oz can of pumpkin
- 1 1/2 cups of oil
- 3 cups of flour
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 1 bag of chocolate chips
Instructions:
- Preheat oven to 400 degrees
- Mix eggs, sugar, pumpkin, and oil until smooth
- Add baking soda, baking powder, cinnamon, salt, and flour. Mix well.
- Fold in chocolate chips
- Scoop evenly into paper muffin cups and bake for 16 minutes
Tips:
- These muffins freeze well
- Best chocolate chips I have found for them are Ghirardelli
