
Ingredients:
- 6oz sharp cheddar cheese
- 4oz medium cheddar cheese
- 2 oz pepper jack cheese
- 1/2 lb bacon, cut into peices
- 1 small finely chopped onion
- 1 red finely chopped bell pepper
- 1 finely chopped jalepeno pepper, take out seeds
- 1 tbsp fresh thyme
- 1/4 cup flower
- 2 cups chicken stock
- 1-1/2 cups light beer
Instructions:
- Cook bacon in large pot, leave 1 tbsp of grease and drain the rest. Chop and set aside.
- Sautee onions, peppers, and thyme in bacon grease.
- Add butter. Once melted, add in flour.
- Pour in beer, stock, and cream.
- Add cheeses slowly, stirring constantly.
- Stir in bacon and serve.
Tips:
- Can garnish with chives.
- I prefer to grill and dice chicken to add to this meal for more protein.
