
Ingredients:
- 2/3 cup butter
- 1 cup sugar
- 3 large eggs, room temperature
- 1-2/3 cup buttermilk
- 2-1/3 cup flour
- 1 cup cornmeal
- 4-1/2 tsp baking powder
- 1 tsp salt
Instructions:
- Preheat oven to 400 degrees
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes.
- Combine eggs and milk in a bowl.
- Combine flour, cornmeal, baking powder and salt in a separate bowl. Add to creamed mixture alternately with egg mixture.
- Grease a cast iron skillet by melting butter over low heat. Pour cornbread batter into pan.
- bake 22- 27 minutes or until a toothpick inserted in center comes out clean.
- Cut and serve warm.
