
Ingredients:
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 cup mashed bananas
- 1/4 cup milk
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 3/4 cups flour
- 1/3 cup oats, plus some to sprinkle on top before baking
- 1 tsp sugar
Instructions:
- Preheat oven 325 degrees. Grease 12 muffin cups in muffin tin.
- In large bowl, beat coconut oil, honey/syrup, eggs, mashed banana, baking soda, vanilla, salt, and cinnamon.
- Add flour and oats. Mix till combined. Add blueberries and mix.
- Divide batter evenly between muffin cups. Sprinkle tops of muffins with oats and sugar. Bake 22-25 minutes.
Tips:
- Keep at room temperature for 2 days, or in the refrigerator for up to 4 days.
- Can be kept in freezer for up to 3 months.
- Can add chocolate chips.
