Chocolate Chip Pumpkin Muffins

(makes aprox. 3 dozen)

Ingredients:

  • 4 eggs
  • 2 cups of sugar
  • 1 16oz can of pumpkin
  • 1 1/2 cups of oil
  • 3 cups of flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 bag of chocolate chips

Instructions:

  1. Preheat oven to 400 degrees
  2. Mix eggs, sugar, pumpkin, and oil until smooth
  3. Add baking soda, baking powder, cinnamon, salt, and flour. Mix well.
  4. Fold in chocolate chips
  5. Scoop evenly into paper muffin cups and bake for 16 minutes

Tips:

  • These muffins freeze well
  • Best chocolate chips I have found for them are Ghirardelli
