
Ingredients:
- 4 cups cold cooked white rice
- 2 tbsp minced garlic
- 3 tbsp butter
- 1-1/2 cups frozen mixed peas and carrots
- 1 tbsp soy sauce
- 1-1/2 tsp salt
- 3/4 tsp pepper
- 2 large eggs
- 1 tsp sesame oil
Instructions:
- Heat butter in large skillet. Add garlic and peas/ carrots. Stir fry about 2 minutes.
- Add cooked rice and toss. Add soy sauce, salt, and pepper.
- Push rice mixture to the side of the pan. Add 1 tbsp butter to pan and cook the 2 eggs, then add to rice. Drizzle with sesame oil. Taste and season with more salt and pepper if desired.
