Fried Rice

Ingredients:

  • 4 cups cold cooked white rice
  • 2 tbsp minced garlic
  • 3 tbsp butter
  • 1-1/2 cups frozen mixed peas and carrots
  • 1 tbsp soy sauce
  • 1-1/2 tsp salt
  • 3/4 tsp pepper
  • 2 large eggs
  • 1 tsp sesame oil

Instructions:

  1. Heat butter in large skillet. Add garlic and peas/ carrots. Stir fry about 2 minutes.
  2. Add cooked rice and toss. Add soy sauce, salt, and pepper.
  3. Push rice mixture to the side of the pan. Add 1 tbsp butter to pan and cook the 2 eggs, then add to rice. Drizzle with sesame oil. Taste and season with more salt and pepper if desired.
