Beer Cheese Soup

Ingredients:

  • 6oz sharp cheddar cheese
  • 4oz medium cheddar cheese
  • 2 oz pepper jack cheese
  • 1/2 lb bacon, cut into peices
  • 1 small finely chopped onion
  • 1 red finely chopped bell pepper
  • 1 finely chopped jalepeno pepper, take out seeds
  • 1 tbsp fresh thyme
  • 1/4 cup flower
  • 2 cups chicken stock
  • 1-1/2 cups light beer

Instructions:

  1. Cook bacon in large pot, leave 1 tbsp of grease and drain the rest. Chop and set aside.
  2. Sautee onions, peppers, and thyme in bacon grease.
  3. Add butter. Once melted, add in flour.
  4. Pour in beer, stock, and cream.
  5. Add cheeses slowly, stirring constantly.
  6. Stir in bacon and serve.

Tips:

  • Can garnish with chives.
  • I prefer to grill and dice chicken to add to this meal for more protein.
