
Ingredients:
- 8 count package large tortillas
- 1 lb breakfast sausage
- half of a white onion, diced
- 2 bell peppers, diced
- 10 eggs
- 40 tater tots
- 1 cup salsa
- 1 cup shredded cheese
- 1 tbsp butter
Instructions:
- Cook tater tots according to pkg directions
- Add butter to a pan and melt. Cook bell peppers and onions in a large pan until soft, add to large bowl.
- Cook breakfast sausage and cook till brown, drain grease and add to the bowl
- In a separate medium bowl, whisk eggs. Add to pan and scramble, then add to large bowl.
- Add salsa and shredded cheese to large bowl
- Separate mixture evenly into the tortillas. Roll into burritos.
- Toast burritos in pan if desired. Can wrap burritos up in foil and freeze.
Thawing instructions for frozen burritos:
- microwave on medium heat for 1 1/2 minutes. Turn burrito. Microwave on medium heat for another minute and a half. Turn burrito once more. Microwave on high for 45 seconds.
