
Ingredients:
- 4 slices of cooked bacon, crumbled
- 2 cloves of minced garlic
- 1 large head of fresh cauliflower, cut into florets
- 1 cup of shredded cheese
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1/4 cup grated parmesan
- 1/4 cup chopped chives
- 2-3 tbsp melted butter
- salt and pepper to taste
Instructions:
- Preheat oven to 400 degrees
- Line baking sheet with parchment paper, wash and cut cauliflower, spread cauliflower on baking sheet, bake for 20-25 minutes or until tender
- Lower oven temperature to 375 degrees
- Prepare creamy cauliflower mixture. Mix sour cream, cream cheese, 3/4 cup cheddar cheese, parmesan cheese, minced garlic, and salt/pepper in mixing bowl.
- Add the roasted cauliflower to the mixing bowl and stir gently to combine
- Grease a casserole dish and transfer the cauliflower mixture into the dish. Spread evenly.
- Sprinkle the remaining 1/4 cup of cheddar cheese and crumbled bacon on top
- Bake the cauliflower cheese casserole in the oven for 15-20 minutes or until cheese is golden brown
