Cauliflower Bake

Ingredients:

  • 4 slices of cooked bacon, crumbled
  • 2 cloves of minced garlic
  • 1 large head of fresh cauliflower, cut into florets
  • 1 cup of shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup cream cheese
  • 1/4 cup grated parmesan
  • 1/4 cup chopped chives
  • 2-3 tbsp melted butter
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees
  2. Line baking sheet with parchment paper, wash and cut cauliflower, spread cauliflower on baking sheet, bake for 20-25 minutes or until tender
  3. Lower oven temperature to 375 degrees
  4. Prepare creamy cauliflower mixture. Mix sour cream, cream cheese, 3/4 cup cheddar cheese, parmesan cheese, minced garlic, and salt/pepper in mixing bowl.
  5. Add the roasted cauliflower to the mixing bowl and stir gently to combine
  6. Grease a casserole dish and transfer the cauliflower mixture into the dish. Spread evenly.
  7. Sprinkle the remaining 1/4 cup of cheddar cheese and crumbled bacon on top
  8. Bake the cauliflower cheese casserole in the oven for 15-20 minutes or until cheese is golden brown
